From his first kitchen experience in 2008 to barback in 2013, and now in 2022 as Honest Cocktail's Research & Development Lead, Spencer, has undergone a hospitality journey, unlike most experience.
In his hometown of New Westminster, BC, he refined his cocktail skills at casino restaurants, public houses, artisanal bistros, wine bars, members-only clubs, and more. Through this gauntlet of venues, his love of craft cocktails built and with each one created for gracious patrons, his confidence and desire built to a point where he was hooked.
Spencer continued to hone his craft through repetition, intuition, research, and training. Designing and developing his signature recipes for infusions, syrups, and shrubs, became a priority one, and this is why he is key to Honest Cocktails.
Having worked with some of the greats in 2017, Spencer was the Beverage Program Manager & Service Lead (affectionately known as the "Chef de Boisson" by regulars) at Chef's Playground Eatery. Working closely with the owner and head chef Gordon Wu helped cement it as a local Steveston favourite within two years. His delightfully unique and approachable drink menu allowed for streamlined, easy crafting of alcoholic and nonalcoholic versions of every cocktail.
Spencer followed up his time in Steveston with a position at the tony Terminal City Club in the Financial District of Vancouver. He helped drive the beverage program with constant creative cocktail features, competed in cocktail competitions, designed cocktails for weddings and other significant events, and more.
